This is not a recipe for fruit jam packaged and kept on a shelf somewhere for long periods. This is a fresh and fruity version to be used shortly after production. It cooks gently and is slightly sweet. The result is a sauce-like consistency combined with a more intense, fresh fruit taste. It is delicious on ice cream, waffles, or toast. It's perfectly mixed with yogurt or oatmeal. until needed It can be frozen in ice cube trays and stored. Here are dip recipes for the four types of fruit I grow every year: strawberries, blackberries, blueberries, and peaches. Each recipe starts with 2 pounds of fresh fruit and requires different amounts of honey due to the varying degrees of sweetness inherent in each fruit. Each one uses a citrus fruit that is best suited for their sauce. Citrus fruits add flavor and balance the acidity.

Ingredients for strawberry sauce

2 pounds of fresh strawberries, peeled

1 cup of honey

A pinch of sea salt

Ingredients for the blackberry sauce

2 pounds of fresh blackberries

2 cups of honey

A pinch of sea salt

The juice and the zest of 2 limes.

Ingredients for cranberry sauce

2 pounds of blueberries

3/4 cup honey

A pinch of sea salt

The juice and peel of a sizeable umbilical orange

Ingredients for the blackberry sauce

2 pounds of blackberries

1 1/2 cup honey

A pinch of sea salt

The juice and peel of a sizeable umbilical orange.

Ingredients for peach sauce

2 pounds of peaches, halved and pitted

1 cup of honey

A pinch of sea salt

The juice and the zest of 2 limes.

Place the fruit in the bowl of your favorite food processor, equipped with a multi-purpose blade. Process until everything is well pureed. Transfer to a thick-bottomed saucepan and add honey and sea salt. Mix well. Remove from heat, add juice and citrus zest and mix well. Adding citrus at the end gives the sauce a freshness that you wouldn't get if you cooked it with the other ingredients.

Tips and suggestions

These sauces can be used raw if desired. Mash the fruit, add the other ingredients and mix well. The result is a much crunchier taste but without some of the baked version's lovely complexities. A big plus when serving raw - it takes about 5 minutes!

Add an apple for a jam-like consistency. Peel and core your favorite apple variety and quickly grind it with the grinding disc of your food processor. Boil it with honey and sea salt for 10 minutes before adding the fruit. Apples naturally contain large amounts of pectin, which gives the jam its gelatinous texture.

This is an easy task for any food processor, so it doesn't require a high-quality model. A full-size food processor is best. However, if you only have a smaller machine, you can bypass it by running multiple batches.
